Leen: A 12-Year-Old Chef in the Making, Sharing Culture and Resilience Amid War

In the heart of the ongoing Israeli war on Lebanon, 12-year-old Leen has found herself displaced from her home in Burj Al-Barajneh, near Dahye Al-Janoubieh. The lively neighborhood she grew up in, filled with friends and bustling streets, is now under relentless bombardment.
“Burj is my land; it’s the place where I was born. I love it and miss it. I miss my Palestinian friendships, the busy crowds, and just being around them,” Leen shares.
Now, Leen is staying in the Mar Elias refugee camp in Beirut, seeking safety with her five brothers. She is the youngest in her family, and her mother has passed away. “It’s very difficult to live under these circumstances. We are grateful, but the bombing and sonic booms cause a lot of stress. We are afraid we will lose our house and family,” she explains.
Despite the challenges, Leen has found purpose and inspiration in her passion for cooking. As an aspiring chef, she volunteers daily at Al Matbakh Al Maftouh, an open kitchen initiative in Mar Elias. Here, she learns traditional Palestinian recipes from older women while cooking meals for Palestinian, Lebanese, and other displaced families. “I love cooking. My dream is to become a chef to help people in need. After our displacement, I started working with NGOs, and they give me so much inspiration,” she says with determination.
Leen is particularly inspired by Chef Salim, a volunteer leading the kitchen. “I love working with Chef Salim, and I’m aiming to become a great chef. YouTube helps me, but Chef Salim is the greatest,” she adds.
Through cooking, Leen not only nourishes others but also keeps her cultural heritage alive. She dreams of one day opening her own kitchen in Palestine, where she can share Palestinian food and stories with the world. “I love Mar Elias; people here are very kind. But my dream is to go to Palestine and have my own kitchen there,” she says.
Leen’s story is one of resilience and hope amid chaos. Her work in the kitchen brings comfort and unity to those around her, reminding everyone that even in the darkest times, the warmth of culture and the strength of a young girl’s dreams can endure.

في برج البراجنة، بالقرب من الضاحية الجنوبية. الحي الذي نشأت فيه، المليء بالأصدقاء والشوارع المزدحمة، يتعرض الآن للقصف المستمر.
تقول لين: “برج هو أرضي، إنه المكان الذي ولدت فيه. أحبه وأشتاق إليه. أفتقد صداقاتي الفلسطينية، وأفتقد الزحام، وأفتقد مجرد التواجد معهم.”
تعيش لين الآن في مخيم مار إلياس للاجئين في بيروت، حيث لجأت مع إخوتها الخمسة. هي الأصغر في عائلتها، بعد أن فقدت والدتها. وتضيف: “من الصعب جدًا العيش في هذه الظروف. نحن ممتنون، لكن القصف والانفجارات الصوتية تسبب الكثير من التوتر. نحن خائفون من فقدان منزلنا وعائلتنا.”
ورغم التحديات، وجدت لين هدفها وإلهامها من شغفها بالطهي. كطاهية طموحة، تتطوع يوميًا في “المطبخ المفتوح”، وهي مبادرة في مخيم مار إلياس. هنا، تتعلم الوصفات الفلسطينية التقليدية من النساء المسنات بينما تطبخ وجبات للعائلات الفلسطينية واللبنانية وغيرها من العائلات النازحة. وتقول: “أحب الطهي. حلمي أن أصبح طاهية لمساعدة المحتاجين. بعد نزوحنا، بدأت العمل مع المنظمات غير الحكومية، وهي تمنحني الكثير من الإلهام.”
وتضيف لين بحماس: “أحب العمل مع الشيف سليم، وأطمح لأن أصبح طاهية عظيمة. يساعدني يوتيوب، لكن الشيف سليم هو الأفضل.”
من خلال الطهي، لا تطعم لين الآخرين فقط، بل تحافظ أيضًا على تراثها الثقافي. تحلم يومًا ما بافتتاح مطبخها الخاص في فلسطين، حيث يمكنها مشاركة الطعام الفلسطيني وقصص شعبها مع العالم. وتقول: “أحب مار إلياس؛ الناس هنا لطفاء جدًا. لكن حلمي هو الذهاب إلى فلسطين وأن أمتلك مطبخي الخاص هناك.”
قصة لين هي شهادة على الصمود والأمل وسط الفوضى. عملها في المطبخ يجلب الراحة والوحدة لمن حولها، ويذكر الجميع بأنه حتى في أحلك الأوقات، يمكن لدفء الثقافة وأحلام فتاة صغيرة أن يبقيا على قيد الحياة.
